Position: Senior Chef
Salary: $75,000 - $85,000 per annum plus 12% superannuation
Hours: 38 hours per week

From delicate King Fish Ceviche and Crispy Spring Rolls to signature mains like Red Curry with duck breast and Tenpayaki Beef Fillet, our menu combines authentic techniques with innovative presentation. We are seeking an experienced Chef to lead our kitchen and bring our menu to life with precision, creativity, and consistency.
Key Responsibilities:
As our Chef, you will play a pivotal role in maintaining the restaurant's reputation for exceptional food quality and memorable dining experiences. Your responsibilities will include:
• Develop seasonal and signature dishes aligned with our seafood and Asian fusion-Modern Australian-inspired menu.
• Estimate food and labour costs to ensure profitability without compromising quality.
• Manage ordering and inventory of fresh seafood, meats, and produce.
• Oversee the preparation and cooking of all dishes, from entrees to mains and desserts, ensuring every plate meets presentation and taste standards.
• Monitor and maintain flavour profiles, portion control, and plating aesthetics consistently.
• Troubleshoot and resolve any preparation issues in collaboration with kitchen staff and management.
• Demonstrate cooking techniques and mentor kitchen staff in seafood handling, Asian fusion-Modern Australian cuisine techniques, and general kitchen practices.
• Select, train, and motivate kitchen team members to maintain high efficiency and morale.
• Allocate tasks and oversee workflow during service to ensure smooth operations.
• Enforce strict hygiene standards and food safety regulations in line with local health codes.
• Ensure proper storage, handling, and preservation of fresh and frozen ingredients.
• Maintain a clean, safe, and organised kitchen environment at all times.
Qualifications:
• Certificate III and IV in Commercial Cookery (Mandatory).
• Diploma of Hospitality Management (Preferred but not mandatory).
Skills & Requirements:
• Minimum 2 years experience as a Chef or in a similar senior kitchen role
• Proven experience as a Chef in seafood or Thai cuisine, or a similar specialty kitchen.
• Strong knowledge of food safety standards and hygiene regulations.
• Ability to lead, train, and inspire a kitchen team.
• Creativity in menu development and dish presentation.
• Strong organisational and time management skills to manage high-volume service periods.
• Ability to deliver premium culinary excellence and sophisticated à la carte dining throughout all-day service including breakfast, lunch and dinner.
