Oi Sushi seeks an experienced Chef to lead our kitchen in preparing authentic Japanese dishes. Your expertise will ensure high-quality execution of our diverse menu, including sushi, sashimi, tempura, teppanyaki, ramen, udon, and donburi.
The responsibilities for the vacant position include:
- Prepare and present Japanese dishes (include but not limit to: sushi, sashimi, tempura, teppanyaki, ramen, udon, donburi) adhering to recipes and quality standards.
- Manage daily mise en place for appetizers, mains, and specialty items (e.g., Aburi nigiri, Okonomiyaki, Nabeyaki Udon).
- Oversee sashimi/sushi production, including cutting fish, rice preparation, and plating.
- Monitor ingredient freshness, stock levels, and kitchen inventory; place orders efficiently.
- Maintain strict hygiene and food safety compliance (HACCP).
- Train junior staff in Japanese cooking techniques and kitchen workflows.
- Collaborate with management on menu development and seasonal specials.
- Handle high-pressure service periods while ensuring timely dish output.
Qualifications and skills required for the role:
- Diploma of Hospitality Management is required, plus Certificate IV in Commercial Cookery
- Minimum 1 year work experience as a Chef in Japanese cuisine
- Advanced mastery of traditional Japanese culinary techniques, including sushi/sashimi preparation, tempura frying, teppanyaki grilling, and broth extraction
- The ability to handle pressure
